Thai Peanut Grain Bowls with Roasted Vegetables

Ingredients

Bowl
  • 1 cup quinoa
  • 1 sweet potato diced
  • 1 red pepper diced
  • 1 zucchini diced
  • 1 tbsp olive oil
  • salt and pepper
  • 1 bunch cilantro
  • 1 bunch green onions
  • 1/4 cup peanuts
Peanut Dressing
  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1/4 tsp garlic powder
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 2 tbsp warm water
  • lime juice to taste

Instructions

  1. Preheat the oven to 400°F. Chop the sweet potato, red pepper, and zucchini into bite-sized pieces. Toss the vegetables with olive oil, salt, and pepper, then spread them onto a lined baking sheet. Roast for 30 to 40 minutes, stirring once halfway through, until the vegetables are tender and lightly caramelized.
  2. While the vegetables roast, cook the quinoa according to the package directions. Fluff with a fork once cooked and set aside.
  3. In a small bowl, whisk together the peanut butter, soy sauce, grated ginger, toasted sesame oil, maple syrup, red pepper flakes, lime juice, and water until smooth. Taste and adjust the seasoning or consistency by adding a little more lime juice or water if desired.
  4. Divide the cooked quinoa among serving bowls. Top with the roasted vegetables, chopped cilantro, chopped green onions, and chopped peanuts. Drizzle generously with the peanut dressing and serve immediately.
