Ingredients

Peanut Sauce
  • 2/3 cup creamy peanut butter
  • 3 tbsp reduced sodium soy sauce
  • 1 tbsp Thai chili garlic paste
  • 1 garlic clove minced
  • 1 tbsp fresh lime juice
  • 1 tsp sesame oil
Pizza
  • 1 lb pizza dough
  • 2 cups shredded cooked chicken
  • 1 cup shredded mozzarella
  • 1/2 cup shredded carrots

Instructions

  1. If making homemade dough, combine the flour, rapid-rise yeast, sugar, and salt in a mixing bowl. Add the warm water and canola oil, then mix until a soft dough forms. Knead lightly until smooth, adding a little more flour if needed. Cover and let the dough rest for 15 minutes. If using store-bought pizza dough, allow it to come to room temperature while preparing the toppings.
  2. Preheat the oven to 325°F. In a small bowl, whisk together the peanut butter, soy sauce, Thai chili garlic paste, minced garlic, lime juice, honey, and sesame oil until smooth to create the peanut sauce.
  3. Lightly grease a 12-inch pizza pan or baking sheet. Roll or stretch the dough into a 12-inch circle and place it on the prepared pan. Spread an even layer of peanut sauce over the dough, leaving a small border around the edges.
  4. Top the pizza with shredded cheese, cooked chicken, sliced bell pepper, shredded carrots, and green onions. Bake for 12 to 15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  5. Remove from the oven and garnish with chopped cilantro and roasted peanuts. Slice and serve immediately with extra peanut sauce or fresh lime wedges if desired.
