Peanut Butter Ramen

Quick peanut butter ramen with broccoli and rotisserie chicken in a sweet chili peanut sauce.

Ingredients

  • 3 packages chicken flavor ramen
  • 2 tbsp olive oil for cooking broccoli
  • 2/3 cup olive oil for sauce
  • 1 bunch broccoli chopped into bite size pieces
  • 1/2 cup creamy peanut butter
  • 3/4 cup sweet chili sauce
  • 2 tbsp low sodium soy sauce
  • 1/2 cup green onion finely chopped
  • 2 tsp red pepper flakes
  • 3 cups shredded rotisserie chicken
  • 1 tbsp lime juice

Equipment

  • Large stockpot
  • High-sided skillet
  • Whisk
  • Colander
  • Measuring cups and spoons
  • Cutting board
  • Knife

Instructions

  1. Bring a large pot of water to a boil and cook the ramen noodles according to the package directions. Drain well and set aside while preparing the sauce.
  2. Heat 2 tablespoons of olive oil in a large high-sided skillet over medium heat. Add the chopped broccoli and cook for about 3 minutes until it begins to become tender while still retaining some crispness.
  3. Add the remaining 2/3 cup olive oil, peanut butter, sweet chili sauce, soy sauce, lime juice, chopped green onions, and red pepper flakes to the skillet. Whisk continuously until the peanut butter has completely melted and the sauce is smooth and fully combined, about 3 to 5 minutes.
  4. Add the cooked ramen noodles and shredded rotisserie chicken to the skillet. Toss everything thoroughly until the noodles and chicken are evenly coated in the peanut sauce.
  5. Continue cooking for another 3 to 5 minutes, stirring occasionally, until everything is heated through. Serve immediately while hot.

Notes

  • Discard the ramen seasoning packets since the peanut sauce provides all the flavor.
  • Cook the broccoli just until tender-crisp so it keeps its texture.
  • Rotisserie chicken makes this recipe especially quick, but leftover cooked chicken also works well.
  • Adjust the red pepper flakes to make the dish milder or spicier.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
