1/4 tsp grated ginger |
1/4 tsp toasted sesame oil |
1/2 tsp maple syrup |
1/4 tsp red pepper flakes |
1/2 juice of lime |
1/2 tsp water |
Thai Peanut Grain Bowls with Roasted Vegetables Directions
1. Preheat oven to 400 degrees. Chop sweet potatoes, red pepper, and zucchini into bite sized chunks. Toss with olive oil, salt, and peppers. Spread out onto a lined baking sheet and roasted for 30-40 minutes.
2. While vegetables are roasting, cook quinoa according to package instructions.
3. Whisk all ingredients to make peanut sauce. Taste and adjust seasonings to your liking.
4. To assemble bowls, evenly distribute quinoa and roasted vegetables. Top with a drizzle of the peanut sauce, chopped cilantro, chopped green onions, and crushed peanuts.
